When sharpening knives at work, customers sometimes ask me, “When is the right time to sharpen a knife?”
Once every six months? Once every three months? Once a month?
Personally, I recommend sharpening with a whetstone when tomatoes no longer cut smoothly.

A sharpener is convenient because it can temporarily improve the sharpness of a knife quickly and easily.
Sharpening with a whetstone is a bit more labor-intensive, but the sharpness is far superior to that achieved with a sharpener.
