Customers sometimes ask me, “What kind of knife do you recommend for home use?”
For general household use, I recommend a “santoku knife” or a “gyuto knife,” as these can handle most tasks.

In terms of material, steel and stainless steel are the most common. Steel knives have excellent sharpness, but if moisture remains on the blade, rust can form quickly. From a maintenance perspective, we don't recommend them for home use. On the other hand, stainless steel is resistant to rust, making it suitable for home use.

In terms of blade length, a santoku knife with a blade length of 16cm-18cm and a chef's knife with a blade length of 18cm-21cm are suitable sizes for household use.

Additionally, many households nowadays have dishwashers. If the handle of a knife is made of wood, it may deteriorate when placed in a dishwasher. If you plan to use a dishwasher, we recommend knives that are dishwasher-safe.
